Tea Making
The pleasure of making tea from loose tea leaves…
You need to set aside at least 10 minutes to allow yourself time to enjoy your cup or cups of tea.
General rules of thumb:
Try and use filtered water. If you want to use tap water, try not to use water that has been standing a while. Make sure it is fresh and has not been boiled before as this would have removed any oxygen in the water.
Always preheat your teapot and cups as the temperature of the water will drop significantly if poured straight into a cold teapot or cup.
If using Tea For You’s green and white loose tea leaves, you want to try and catch the kettle before it boils, or if it has, leave it to cool 5-10 minutes. The ideal temperature is around 80-85 degrees centigrade.
To achieve this, you can try and watch for bubbles as the water begins to heat that are the size of crabs’ eyes, around 1-2mm in diameter.
Try 1 teaspoon (2-3gms) of tea leaves per person to begin with and allow the tea leaves to infuse for 2 minutes with green and white teas. You can then try 2nd and 3rd infusions using longer infusion times. This will control the bitterness of the tea, especially green tea leaves as if it is left too long to infuse, the bitter tannins will be allowed to come out. You can experiment by adding the tea leaves to the water as opposed to pouring the water over the leaves. This should lower the amount of caffeine from the leaves as it wont be forced out.
Using Tea For You’s black loose tea leaves and naturally caffeine free tea leaves, you will want to let the water start to boil but stop it just as it goes to boil and goes silent before a full on boil. When you have done it once or twice you will get to know this stage of boil. Allow it to stop boiling and let it pause to breathe slightly before pouring over the tea leaves.
Again, try using 1 teaspoon (2-3gms) per person and if using a teapot for 3 or more, one for the pot. Allow to infuse for a good 3 minutes.
With Tea For You black tea leaves, you shouldn’t need to use milk or sugar but I wont be there to tell you not to if its what you do!.
You should get more than 1 infusion out of all of Tea For You teas, and many more if drinking the oolong teas and naturally caffeine free teas.
Dont stand up to drink, take a seat and relax and enjoy the tea.
