China Anxi Tie Guan Yin Oolong Tea

This China Anxi Tie Guan Yin Oolong tea has a long, clean flavour profile producing a floral, vegetal sweetness and a cooling tingly mouthfeel. Produced in Anxi, Fujian Province.

The spent leaves are quite thick allowing you to see quite clearly how the leaf has been oxidised. This oolong loose leaf tea can be infused many times and is highly recommended for gongfu cha using Yixing clay teapots and quick infusions.

Infusion temperature should be between 85 to 90 degrees Celsius increasing in temperature for latter infusions.

Recommended Infusion instructions:
Boiling but not boiled water (100 degrees Celsius – fish eyes bubble size, see Tea Making for more info)
5-8gms of tea leaves to 100ml gaiwan/clay teapot
You can do a rinse but I don’t as I find with most teas, the first infusion is the most revealing.
Infusions 1 to 3: 10-15 seconds
Infusions 4 to 6: 15-20 seconds
Infusions 7+: 20 seconds +
