This Taiwan He Huan high mountain oolong tea has shiny dark, tightly rolled leaves which are clean with no dust and therefore rinsing is discretionary.
He Huan Mountain can be found in central Taiwan between Nantou and Hualien, reaching to over 3,400 metres in height
Flavour notes include floral ‘baked’ vegetal sweetness. That’s the only way I can describe it. I’d like to say ‘baked’ as in a yam or sweet potato but not sure that describes it correctly!
The flavour is consistent through many infusions with no bitterness from tannins at all.
Best infused Gongfu cha style using Clay teapots, but just as nice using a Gaiwan. Infusion temperature between 85 to 95 degrees Celsius.

Recommended Infusion instructions:
Boiling but not boiled water (100 degrees Celsius – fish eyes bubble size, see Tea Making for more info)
5-8gms of tea leaves to 100ml gaiwan/clay teapot
You can do a rinse but I don’t as I find with most teas, the first infusion is the most revealing.
Infusions 1 to 3: 10-15 seconds
Infusions 4 to 6: 15-20 seconds
Infusions 7+: 20 seconds +

Nice oolong. It has big leaf, yellow liquor . astringency in the mouth – very floral taste. Long lasting and strong QI -sweet oolong
