China Black Dian Hong Tea

This China Black Dian Hong tea (YunNan Red) cake has been aged for 3 years before being released for sale. It is made with the leaves of ancient tea tree (more than 100 years aged tree).

This tea cake delivers a very deep, rich, clean flavour and aroma. There are hints of the gold leaf Dian Hong (also available on the website) but this is more robust without being bitter.

It is currently available as a 357gm cake and 50gm pouches

Recommended Infusion instructions:
Boiling but not boiled water (100 degrees Celsius – fish eyes bubble size, see Tea Making for more info)
5gms of tea leaves to 150ml gaiwan/clay teapot
You can do a rinse but I don’t as I find with most teas, the first infusion is the most revealing.
Infusions 1 to 3: 20-30 seconds
Infusions 4 to 6: 30-60 seconds
Infusions 7+: 60 seconds +
