China Black Jin Jun Mei Tea

£7.50

This China black Jin Jun Mei Tea (honey aroma) is produced in Tongmu village in Fujian Province. It has a great amount of natural sweetness for a black tea. The flavour reminds me of summer hay sweetness.

The production of Jin Jun Mei requires a lot of raw material to produce the final product due the quality of leaf required. The leaves include a lot of fine single leaf and golden buds.

Great for Gongfu cha style infusion and can be infused many times.

Available in 50gm pouches

Recommended Infusion instructions:
Boiling but not boiled water (100 degrees Celsius – fish eyes bubble size, see Tea Making for more info)
5gms of tea leaves to 150ml gaiwan/clay teapot
You can do a rinse but I don’t as I find with most teas, the first infusion is the most revealing.
Infusions 1 to 3: 20-30 seconds
Infusions 4 to 6: 30-60 seconds
Infusions 7+: 60 seconds +

Drinking this Jin Jun Mei, gong fu cha style, was a really good experience: it had a wonderful complex scent coming from the opened bag, like strawberry cake. The dry leaves look thin and needle like. The wet leaves had scents of tobacco, then s.th. I couldn’t put a name to, then sweetness. The liquid was copper red, with a lively play of oily fragrances on the surface, tasting strong, but round and mellow. 4-5 brews with all from 20 sec, going up about 10 sec each new brew. And still much power for more. Recommended! : )
