This China Tie Guan Yin High Roast Spring 2018 Oolong Tea is very similar to the 2005 (now sold out) which we had, and has been produced by the same tea master.
The leaves are very dark and are rolled up tightly, but not too tight so as not to open. Not shiny either, which can point to over roasting.
No charcoal or burnt flavours or aromas at all. A nice golden brown liquor which has no astringency to it. It’s a very clean tea with little to no dust.
Dark chocolate notes (maybe coffee too) with a hint of raisin coming through as a fruit note.
The leaves never fully open up and keep giving for many infusions.

Recommended Infusion instructions:
Boiling but not boiled water (100 degrees Celsius – fish eyes bubble size, see Tea Making for more info)
5-8gms of tea leaves to 100ml gaiwan/clay teapot
You can do a rinse but I don’t as I find with most teas, the first infusion is the most revealing.
Infusions 1 to 3: 10-15 seconds
Infusions 4 to 6: 15-20 seconds
Infusions 7+: 20 seconds +
